Peruvian Tofu Stuffed Avocados

Ingredients

PERUVIAN TOFU

  • 6 OZ. WILDWOOD® SAVORY BAKED TOFU, SMALL DICE
  • 1/4 CUP RED ONION, SMALL DICE
  • 1/4 CUP CILANTRO, CHOPPED
  • 2 EA. GARLIC CLOVES, MINCED
  • 1/4 CUP FRESH LIME JUICE
  • 1 TSP. SALT
  • 1 TSP. SUGAR
  • 2 TSP. CORIANDER, GROUND
  • 2 TSP. CUMIN, GROUND

GRILLED AVOCADOS

  • 2 EA. AVOCADOS
  • 1/2 TBSP. CANOLA OIL
  • 1 TSP. SALT
  • 1 TSP. BLACK PEPPER

ASSEMBLY:

  • 4 EA. GRILLED AVOCADOS
  • 1 CUP PERUVIAN TOFU
  • 4 EA. CILANTRO LEAVES, PICKED, WASHED

Preparation

PERUVIAN TOFU

  1. IN A MIXING BOWL COMBINE TOFU, RED ONION, CILANTRO, GARLIC, LIME JUICE, SALT, SUGAR, GROUND CORIANDER AND GROUND CUMIN.
  2. THOROUGHLY MIX INGREDIENTS TOGETHER AND RESERVE FOR ASSEMBLY.

GRILLED AVOCADOS

  1. PREHEAT GRILL.
  2. CUT AVOCADOS IN HALF AND TAKE OUT SEED.
  3. LIGHTLY COAT AVOCADOS IN OIL AND SEASON WITH SALT AND BLACK PEPPER.
  4. PLACE AVOCADOS CUT SIDE DOWN ON PREHEATED GRILL AND COOK FOR 2 MINUTES.
  5. RESERVE AT ROOM TEMPERATURE FOR ASSEMBLY.

PREPARATION:

  1. EQUALLY FILL EACH GRILLED AVOCADO WITH THE PERUVIAN TOFU MIXTURE.
  2. GARNISH WITH CILANTRO LEAVES.
  3. SERVE IMMEDIATELY.
