Onederful® Summer Parfait

Ingredients:

For the tofu sweet cream:

  • 12 oz. Onederful® Tofu
  • 1/4 cup dairy-free cream
  • 1/2 cup powdered sugar
  • 1 tbsp. orange zest

Assembly:

  • 2 cups angel food cake
  • 2 tbsp. triple sec
  • 2 tbsp. orange juice
  • 1/2 cup strawberries, sliced
  • tofu sweet cream as needed
  • 1/2 cup blueberries
  • 1/4 cup raspberries

Preparation:

For the tofu sweet cream:

  1. Place all of the ingredients in a blender and blend until smooth.
  2. Reserve tofu sweet cream in the refrigerator and allow to sit for at least one hour.

Assembly:

  1. Cut angel food cake into 1/2 inch cubes and place in a mixing bowl. Pour triple sec and orange juice over the angel food cake.
  2. Assemble parfaits in the following order: cake, strawberries, cream, blueberries, cream, cake, cream and garnish with raspberries.
  3. Repeat step 2 until all ingredients are evenly distributed between parfaits.
  4. Serve immediately.
