Onederful® Lemon Custard

Ingredients:

  • 1 pkg. Onederful®, WILDWOOD® MEDIUM/SOFT OR SPROUTOFU® SILKEN Tofu
  • 2 lemons, zest and juice of both
  • 1/4–1/2 cup sugar, to taste
  • 1/4 cup cold water
  • 1 tsp. vanilla extract
  • 1 pkg. of unflavored gelatin

Preparation:

  1. In a small bowl, bloom the gelatin over cold water for about 5 minutes.
  2. Meanwhile, in a saucepan, gently heat the lemon juice and sugar and dissolve the gelatin into the mixture until smooth.
  3. In a blender, combine the tofu and lemon-gelatin mixture until smooth.
  4. Pour the mixture into custard cups and allow to chill for about 2 hours or until set.
  5. Enjoy with fresh berries or your favorite dessert sauce or in your favorite dessert dishes.
