- In a small pot, heat olive oil over medium heat. Add onions and begin to sweat. Keep cooking onions until they are very caramelized, remembering to stir often. Remove from heat and let cool.
- While onions are cooking, add tofu to a blender and blend on high until very smooth in texture. Transfer blended tofu to a mixing bowl.
- When onions have cooled, transfer them to a cutting board and rough chop them.
- Add chopped onions and remaining ingredients to blended tofu and stir gently until all ingredients are combined.
- Serve immediately.
Serving Suggestion: Enjoy with your favorite chips, crackers or veggie sticks.
