Onederful® Caprese Crostini

Ingredients:

Tofu "mozzarella"

  • 12 oz. Onederful® Tofu
  • 2 ea. Garlic, minced cloves
  • 1 tsp. red pepper flakes
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 cup olive oil

Caprese Mixture:

  • 1/8 cup olive oil
  • 2 tsp. salt
  • 10 ea. Basil leaves
  • 3 ea. Tomato, small dice
  • 2 tsp. salt

Assembly:

  • 10 slices baguette, 1/4 inch slice, toasted
  • Caprese (as needed)
  • Tofu “mozzarella” (as needed)

Preparation:

Tofu "mozzarella"

  1. Drain one package of Onederful® tofu and slice in half horizontally.
  2. Using a 1 inch round cookie cutter, punch out circles of tofu.
  3. In a mixing bowl, combine the tofu and the remaining ingredients. Carefully, mix thoroughly.
  4. Marinate for at least one hour in the refrigerator.

Caprese Mixture:

  1. In a mixing bowl, combine all the ingredients and reserve for assembly.

Directions:

  1. Place caprese mixture over the crostinis and top each with one piece of the Onederful® Tofu "Mozzarella."
  2. Serve immediately.
