Ambrosia Fruit Salad
- 1½ cups Onderful® Tofu
- 3 tbsp. powdered sugar
- 1 cup pineapple, medium diced
- 1 cup mandarin oranges
- 1 cup red grapes, halved
- 1/2 cup coconut flakes, toasted

- Place tofu and powdered sugar in a blender and blend on high until smooth, thick and creamy.
- In a mixing bowl place pineapple, mandarin oranges, grapes, and coconut flakes.
- Add blended tofu to fruit and gently fold.
- Serve immediately.
